アーティスト・イン・レジデンスプログラム2026「EAT」に参加しているアーティスト、黄志逍によるワークショップを開催します。
黄さんは青森での滞在中、食をめぐる権力や支配のあり方を考える手がかりとして「小麦」に注目し、出身地である中国北方の麺づくりの工程「和面」を一つの切り口として、リサーチを進めています。
「和面」は、小麦粉に水を加え、生地をこねる工程です。生地は、気温や水分量などによって状態が変化するため、人が一方的に力を加えて思い通りにコントロールできるものではありません。人が力を入れると、生地からも抵抗が返ってき、それに応じて力を加減する必要があります。黄さんは、こうした生地とのやりとりの中に、相手を一方的に支配するのではなく、互いの反応を受け取りながら調整していく、他者との関係のあり方を見出しています。
今回のワークショップでは、食の記憶や家庭料理、故郷の味、食生活の変化など、参加者それぞれの食にまつわるエピソードを持ち寄り、それをきっかけに対話をしながら、一つの生地を一緒にこねていきます。
料理の技術を学ぶことを目的としたワークショップではありません。
誰かと一緒に手を動かすなかで、自分とは異なる感覚や方法に出会い、互いに調整しながら一つの生地を作っていくことを通して、他者とともに何かをつくることについて考えます。

※本ワークショップは黄さんの作品制作の一環として実施するため、ワークショップの様子を写真・動画・音声で記録させていただきます。記録したものや、参加者とともに制作したものは、今後開催予定の成果発表展において、黄さんの作品の一部として発表する可能性があります。あらかじめご了承のうえ、ご参加ください。

We are pleased to present a workshop led by artist HUANG Zhixiao, who is participating in Artist in Residence Program 2026 “EAT.”
During her residency in Aomori, Huang has been focusing on wheat as a way of exploring power and control in relation to food. One of the starting points for her research is huó miàn, a traditional process of making noodles in northern China, where she grew up.
Huó miàn refers to the process of adding water to wheat flour and kneading the dough. The condition of the dough changes depending on factors such as temperature and moisture, making it impossible to simply apply force and control it as one wishes. When force is applied, the dough responds with resistance, requiring the person kneading it to adjust the amount of force accordingly. Through this interaction with the dough, Huang explores ways of relating to others that do not rely on one-sided control, but instead involve responding to each other and making adjustments along the way.
In this workshop, participants will bring their own stories and memories related to food, such as memories of eating, home cooking, the tastes of their hometowns, and changes in their eating habits. These stories will serve as starting points for conversation as participants work together to knead a single piece of dough.
This workshop is not intended to teach cooking techniques. Rather, through working with others and encountering ways of sensing and doing things that may differ from our own, participants will adjust to one another as they work together to make a single piece of dough. Through this process, we will consider what it means to create something together with others.

Age: Elementary school students and above
*This event will be conducted in Japanese only.
*This workshop consists solely of the dough-kneading process. There will be no food or drink tasting.
*As this workshop is part of Huang’s artistic practice, the workshop will be documented through photographs, video, and audio recordings. The documentation, as well as the work created together with participants, may be presented as part of Huang’s work in a forthcoming exhibition showcasing the outcomes of the residency. Please be aware of this before participating.
*Please wear clothing that you do not mind getting dirty.
